Potatoes...

I love potatoes; mashed, baked, fried does not matter pretty much anyway you can cook a potato I love it. So here are some fun potato recipes of mine.

Garlic mashed potatoes:

These recipe is all about tasting as you go so I do not always have exact measurements but add stuff a little at a time until it tastes right.
8-10 small or 4-6 large red(new) potatoes

Fresh garlic I usual crush my own but buying the precrushed is fine. But do not use dry garlic it does not have the flavour of fresh.

1 stick salted butter

Half and half (I usually get a pint but you may not use it all.)

Salt & Pepper

Clean, de-eye and cube the potatoes, do not remove the skin!
Boil the potatoes in a large pot checking with a fork until all are soft.
Drian the potatoes and pour into a bowl. I use my electric mixer but you can hand mash it is up to you.

Using medium speed, mix the potatoes until throughly mashed add in the butter gently stirring with a spatula by hand until it is all melted. Then using low speed start adding the half and half until it is nice and creamy and thick. Then start adding garlic, salt and pepper until you are satisfied with the taste.

Other optiopnal items you can add are cheese (a sharp cheddar, gruyere or parmesean are best) cooked and chopped up bacon and sauteed mushrooms are also delicious.

Another option is make the potatoes then put in the oven with the cheese mushrooms and bacon sprinkled on top and bake until the cheese is melted.

Sour cream is also a tasty addition.

Serves 4-6 people

Breakfast potatoes:

Same ingredients as mashed potatoes except no half and half and you can also add some diced sweet onions.

Instead of boiling the potatoes until they are completely soft drain them while they are still a little firm.

Transfer to a large fry pan add about half a stick of butter, garlic, salt, pepper, mushrooms, bacon and diced onions and fry up until crispy on the outside. Once the potatoes are mostly done sprinkle cheese over the top to let it melt some.

Baked sliced olive oil and salt & pepper potatoes:

2-4 medium yukon gold or 4-6 medium red potatoes
Olive oil
Salt & pepper

heat up your oven to 375 degrees.

You can hand slice or if you have a mandoline. Using the thicker slice setting I slice up the potatoes. Then lay them out on a baking sheet or stoneware pan sprinkle olive oil and salt and pepper over the potatoes and and bake until crispy around the edges and soft in the middle.
