Pizza part Deux...

So you all may recall I did an entry a few months back about a pizza I created..well tonight I tried again and created a couple of pretty tasty pizzas. I much prefer using this dough divided in half to make thin crust pizzas. Not nearly as doughy. But I am still not 100% satisfied and will try different recipes.

Using my pizza mix again I added garlic and dill and divided the dough in half. Preheat the oven to 425.

Pizza one had one chicken breast grilled. half a portobella and a handful of regular button mushrooms chopped in to smallish pieces browned in a little bit of unsalted butter. I used about 1/4 to 1/2 cup "light" alfredo sauce. The cheese mix was mozzerella, asiago and parmesan. You will also need one ripe, but not too ripe avocado, cubed.


Spread the crust onto my round pizza stone within about a 1/2 inch to 3/4 inch from the edge. spread the alfreado sauce around the crust then add the chicken and mushrooms. You can also add fresh sliced tomatoes for another flavor. Spread the cheese on top then bake for aprox 15 minutes or until the crust is a golden brown around the edges. Removes the pizza from the oven and spread the cubed fresh avocado on top and serve.



Pizza two went on my other flat stoneware spread 1/2 to 3/4" from the edge. For the sauce I use 1/4 cup plain tomato sauce and 1/4 cup teryaki sauce of your choice. Mix and pour on thh dough spreading gently. Using another grilled chicken breast, mushrooms and thin sliced pieces of pineapple spread on top of the dough and sauce then add just plain maozzerella cheese. Also bake for 15 minutes or until the crust is golden brown around the edges then Serve!
