Omelettes, death and puppies
I have my dog on the weekends right now while the ex is working an event. My dog loves my cat Baggo, sadly Baggo got sick recently, seriously sick and on Tuesday I had to make the decision to have my old man put out of his pain and suffering.
So Thursday comes around and I pick up the pooch who was thrilled to get out for the weekend, not even a new squeaky pirate chicken from the ex could make her stop staring me then at the door while I gathered her things and got ready to go. We get to the house in Berkeley and she rushes in to say hey to Baggo as usual to give him the prescribed head licks he would tolerate from her. But, no Baggo, she looked around nosing about a bit and then sort of settled in. But there is a diference this time she is a bit more clingy to me this weekend..as I cleaned my room washing the curtains and cleaning up the floor etc she keeps wandering over to spots Baggo would hang out in and just stops in a kind of confusion.
Thursday night she sleeps much closer to me all night.
But she is a dog and nothing really upsets her for too long she played with one of her regular puppy friends this morning, Lola, a pitbull rescue owned by a very nice couple. Tonks saw Lola and Lola saw Tonks and the rolling chasing and wrestling began, then Twoie, a beautiful 1 year old Alaskan malamute(sp?) arrives and three of them get soaking wet and a bit muddy chasing and romping in the park on the dew covered grass. Once back home I towel her wiggleness off and I got in and decide to make a fancier breakfast than the usual oatmeal or cereal. Now I sit here with her curled up next to me as I type up my latest cooking experiment.
I am not great at omelettes, hell I had to look up the word to spell it right. Although spell check does not seem to know the word either and keep suggesting I change it to letterbombs! I almost always get frustrated and it turns into a giant scramble instead of an omelette because it falls apart but this time I was determined to do an actual omelette! So I got some shallots and cherry tomatoes from the garden then got a small bit of bacon and a couple of mushrooms. (bacon tip: I like the center cut bacon and my Mom told me if you freeze it it will last longer and since I have been trying to keep up with my healthier eating I have been freezing these and they last MUCH longer that way. And I can go easy on the bacon.)
I also used reduced fat sharp cheddar cheese and a spoonful of light sour cream. I sauteed the shallots and mushrooms together then added the bacon just spraying the pan with Pam or some other non-stick spray instead of using butter or oil. (Since I use frozen bacon I take the slab and just use a big knife and cut a slice through all the slices getting a nice batch of bite size pieces instead of trying to separate whole slices, then I microwave them for about 10-20 second to thaw them enough to separate.) I put all this aside on a paper towel to soak up the excess grease/fat. Then I slice and lightly saute the tomatoes just to heat them up a bit.
I whip up the eggs and pour a small amount of milk(I use non-fat) and then add salt, pepper, dill, and garlic salt. Spraying the pan with more Pam I pour the eggs into the pan and let it sit for a little bit while it cooks, then I test the edges and gently, with a rubber spatula, lift the edges up and letting more uncooked egg underneath the cook and stick to the already cooked layer. I do this until there is only a little bit of dampness on the top layer. Then I sprinkle the cheese in a thin layer and add all the sauteed veggies and bacon in the middle. Then I trifold the omlette and put on the plate adding the spoonful of sour cream on top.
I worked perfectly and I had a yummy omelette that did not fall apart on me for change! Mom is going to show me how to do fluffy omelettes which I like better than the thin slightly crispy one I made here but this was still very tasty. I'll do another video cooking installment.thing for that one!
Mom thought my last video was cute so we will probably be doing more cooking with Mom segments soon!
