Crackamole or; how to addict your friends to your food.

So now that I'm an adult I have all kinds of foods I like to make for parties and family meals. One of the my biggest favs is also one of the simplest things to make but everyone loves it. I can even bribe folks when I make my Crackamole. I've even gotten friends who hated avocados to eat my guac!


But it wasn't always that way, I hated avocados they looked slimey and icky and it wasn't until my late 20's that I actually had guacamole...it's kind of like when you were a kid and would not eat something either based on the fact that it looked or smelled weird. I fought my Mom tooth and nail the first time she tried to get me to eat watermelon, threw a royal tantrum over it until I actually chewed it then I was back asking for more feeling very silly.

Course that did not work with cauliflower or broccoli but Mom would let me drown my broccoli in lemon juice..cauliflower, well nothing could improve that stuff... blech still can't stand that stuff, especially cooked, it smells so nasty. I grew out of my dislike of broccoli though and find it tasty.

So once I realized how much I loved avocados I got them on all kinds of food, burgers, omeletts, salads and of course I had to learn how to make guacamole! It's a lot simpler than it seems which means as soon as I share it with you all I'll never be able bribe anyone again but oh well that's what these notes are all about sharing my passion for food and cooking with all of you.

Cybele's Crackmole:

4-6 ripe avocados

2 medium tomatos or 3 Romas

Half a bunch of green onions washed and the white ends trimmed(4-6 stalks)

1 pouch mild (or spicey if you prefer) guacamole mix ( I use Mcccormick, Mucho or Concord brands)

1.Skin and pit each avcado then mash, for years I used my Pampered Chef mini-whipper it mixes and mashes the avacados really well, I still use it from time to time but for a really smooth guac I use my Kitchenaide stand mixer. Either way works!

2. Add in the guac mix and let sit.

3. Dice the tomatos into smallish cubes and chop the onions into thin pieces.

4. Mix both into the guacamole, cover then let sit in the fridge for about 30 minutes so the mix has time to absorb.

I do not put lime juice, cilantro or any other items in my guac, why? Well I think lime juice ruins the rich smooth taste of the avocado while tomatoes and onions enhance it's flavour. Plus keeping it simple makes it that much easier and fun to make. I like cilantro but a lot of folks I know do not so I never bothered with it...
