Quiche and expiration dates

I decided I wanted to make a quiche the other day just because it sounded tasty. I pulled out the Better Homes and Gardens cookbook to see what kind of recipes they had and picked one of the simple ones but added some modifications myself.

I even used a pie crust mix instead of a frozen crust, mixing it and pressing it into a pie tin. the mix came out well but I had too much filling and it took forever to bake, almost 20 minutes longer than the recipe but it was fun to make. I am going to try again before I actually post a recipe for it but for my first attempt it was success.

It was also very simple except for the extra baking time I learned a few things about portions, measurements and how to use pie crust dough.

One of the reasons for making this dish is because I have been trying to clean out all my pantry supplies that I moved with last year into Mom's house. I tried last week to make cornbread with my Marie Calendar's mix from Costco only to have them come out of the oven like leaden hockey pucks that tasted terrible! When I checked the bag it had expired 3 or so years ago. So I stated sorting through stuff finding that many of my pantry items had expired ages ago.

Obviously I need to be better about how much I am buying and using it all. So I have a new resolve to use up all the stuff I still have and to keep my pantry, when I have my own kitchen again, much smaller. When is the last time you all cleared out your pantry? Might be a good idea to check you cabinets and see if anything you have in there has expired, you never know how unsafe some of that stuff could be. If nothing else at least it is a good reason to do some clean up!
